Zucchini Corn Chowder

Ingredients

  • 4 cups zucchini, diced
  • 2 cups corn, fresh or frozen
  • 1 onion, chopped
  • 3 slices turkey bacon, chopped
  • 4 cups vegetable broth
  • 1 cup cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onion and cook until translucent.
  3. Stir in zucchini and corn; cook for another 5 minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Stir in cream, salt, pepper, and paprika; cook for an additional 5 minutes.
  6. Serve warm.

  • For a thicker chowder, blend a portion of the soup and stir it back in.
