Slow Cooker White Wine Chicken Stew

  • 2 pounds chicken thighs
  • 1 cup white wine
  • 4 cups chicken broth
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups potatoes, diced

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Sear the chicken thighs until golden brown on both sides.
  3. Transfer the chicken to the slow cooker.
  4. Add the vegetables, garlic, thyme, salt, and pepper on top of the chicken.
  5. Pour white wine and chicken broth over the ingredients in the slow cooker.
  6. Cover and cook on low for 6-8 hours or until chicken is tender.
  7. Shred the chicken before serving.
