- 2 pounds chicken thighs
- 1 cup white wine
- 4 cups chicken broth
- 3 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 cups potatoes, diced
