Roasted Sweet Potato, Chicken, Kale, and Rice Bowls for Two

A delicious and healthy meal that combines roasted sweet potatoes, chicken, kale, and rice, perfect for a cozy dinner for two.

Ingredients

  • 2 medium sweet potatoes
  • 2 boneless, skinless chicken breasts
  • 4 cups kale, chopped
  • 1 cup brown rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
  4. While the sweet potatoes are roasting, cook the brown rice according to package instructions.
  5. In a skillet, heat a little olive oil and cook the chicken breasts until golden brown and cooked through, about 6-7 minutes per side.
  6. Steam the chopped kale until wilted.
  7. Once everything is cooked, assemble the bowls with a base of rice, topped with sweet potatoes, sliced chicken, and steamed kale.
  8. Serve warm and enjoy!
