  • 1 large sweet potato
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the sweet potato into cubes.
  3. Slice the plantains diagonally.
  4. Toss the sweet potato and plantains with olive oil, salt, black pepper, and paprika.
  5. Spread them out on a baking sheet and roast for about 25-30 minutes.
