  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups béchamel sauce
  • 1 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the eggplants and sprinkle with salt, letting them sit to remove bitterness.
  3. In a pan, heat olive oil and sauté onions and garlic until soft.
