Moroccan Chickpea Stew

  • 2 cups chickpeas
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the minced garlic, cumin, coriander, cinnamon, and cayenne pepper; stir for 1 minute until fragrant.
  3. Add the diced tomatoes and chickpeas, then pour in the vegetable broth.
  4. Bring the stew to a simmer; cook for 20-25 minutes.
  5. Stir in the chopped kale and lemon juice, cooking for an additional 5 minutes.
  6. Season with salt to taste and serve hot, garnished with fresh cilantro.
