  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 1 cup fresh mixed berries

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large bowl, beat cream cheese, sugar, and vanilla until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. In separate bowl, combine crushed graham crackers and melted butter.
  5. Press the graham cracker mixture into the bottom of mini cheesecake cups.
  6. Pour the cream cheese mixture over the crust.
  7. Bake for 20 minutes, then cool for at least 1 hour.
  8. Top with fresh berries before serving.

Notes
