Mexican Street Corn Salad

  • 4 cups corn kernels
  • 1/2 cup diced turkey bacon
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop into pieces.
  2. In a large bowl, combine the corn, turkey bacon, mayonnaise, sour cream, lime juice, chili powder, and salt. Mix well.
  3. Fold in the feta cheese, cilantro, and diced avocado just before serving.
