1 pound sirloin steak, cut into bite-sized pieces
1 pound baby potatoes, halved
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 tablespoon fresh parsley, chopped
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until crispy.
While the potatoes are roasting, heat a skillet over medium-high heat and add 2 tablespoons of butter.
Add the steak bites to the skillet and season with salt, pepper, and thyme. Cook for 3-4 minutes until browned.
Add the remaining butter and minced garlic to the skillet, stir to combine, and cook for an additional 2 minutes until the garlic is fragrant.
Remove from heat and sprinkle with fresh parsley.
Serve steak bites hot alongside roasted potatoes.
Notes
For a spicier kick, add red pepper flakes to the steak seasoning.
