  • 1 whole chicken, cut into pieces
  • 2 cups rice
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper; sauté until soft.
  3. Stir in the diced tomatoes, paprika, and turmeric.
  4. Add the chicken pieces and cook until browned on all sides.
  5. Pour in the chicken broth and bring to a boil.
  6. Add rice, stir, and reduce the heat to low.
  7. Cover and simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
  8. Season with salt and black pepper to taste.
