  • 1 cup shredded cheese
  • 1 can enchilada sauce
  • 8 corn tortillas
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the shredded chicken with half of the enchilada sauce and half of the cheese.
  3. Warm the corn tortillas to make them pliable.
  4. Fill each tortilla with the chicken mixture, roll, and place seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top, then sprinkle with the remaining cheese.
  6. Bake for 20-25 minutes until cheese is bubbly and golden.
