Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk sugar, oil, eggs, and vanilla until blended.
  4. Gradually add the dry ingredients to the wet ingredients, then fold in grated carrots.
  5. Pour batter into a lined baking pan and spread evenly.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Remove from oven, let cool slightly, then invert onto a clean towel.
  8. Spread cream cheese frosting over the cake and roll it up tightly.
  9. Wrap in plastic wrap and refrigerate until ready to serve.
