Ingredients

  • 2 pounds beef chuck roast
  • 1 pound beef shank
  • 4 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion, halved
  • 4 garlic cloves
  • 1 teaspoon ground cumin
  • 2 bay leaves
  • 4 cups beef broth
  • Salt to taste
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Toast the dried chilies in a skillet over medium heat until fragrant.
  2. Remove stems and seeds from the chilies, then blend with onion, garlic, cumin, and a little beef broth until smooth.
  3. In a large pot, add the beef, bay leaves, remaining broth, and the chili mixture. Bring to a boil.
  4. Reduce heat and simmer for about 3 hours until the beef is tender.
  5. Once cooked, shred the beef and serve in tortillas with cilantro and lime.

Notes

  • For added flavor, let the beef marinate in the chili sauce overnight.
  • Serve with a side of consomé for dipping.
