- 2 pounds beef chuck roast
- 1 pound beef shank
- 4 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion, halved
- 4 garlic cloves
- 1 teaspoon ground cumin
- 2 bay leaves
- 4 cups beef broth
- Salt to taste
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- Toast the dried chilies in a skillet over medium heat until fragrant.
- Remove stems and seeds from the chilies, then blend with onion, garlic, cumin, and a little beef broth until smooth.
- In a large pot, add the beef, bay leaves, remaining broth, and the chili mixture. Bring to a boil.
- Reduce heat and simmer for about 3 hours until the beef is tender.
- Once cooked, shred the beef and serve in tortillas with cilantro and lime.
