- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 2 cups onions, chopped
- 2 cloves garlic, minced
- 3 tablespoons tomato paste
- 1 can (14.9 ounces) Guinness beer
- 2 cups beef broth
- 4 large carrots, sliced
- 3 potatoes, cubed
- 2 teaspoons dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Heat the oil in a large pot over medium-high heat.
- Add the beef cubes and brown on all sides. Remove and set aside.
- Add onions and garlic to the pot and sauté until onions are translucent.
- Stir in the tomato paste and cook for another minute.
- Pour in the Guinness beer, scraping up any browned bits from the bottom of the pot.
- Add the beef back into the pot along with broth, carrots, potatoes, thyme, and bay leaf.
- Bring to a boil, then reduce heat to low and simmer for 2 hours until beef is tender.
- Season with salt and pepper before serving.
Notes
- This stew tastes even better the next day when the flavors have had time to meld.
- Serve with crusty bread for a complete meal.
