Beef and Guinness Stew

A rich and hearty beef stew made with Guinness beer for a unique flavor and comfort.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 2 cups onions, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 1 can (14.9 ounces) Guinness beer
  • 2 cups beef broth
  • 4 large carrots, sliced
  • 3 potatoes, cubed
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pot over medium-high heat.
  2. Add the beef cubes and brown on all sides. Remove and set aside.
  3. Add onions and garlic to the pot and sauté until onions are translucent.
  4. Stir in the tomato paste and cook for another minute.
  5. Pour in the Guinness beer, scraping up any browned bits from the bottom of the pot.
  6. Add the beef back into the pot along with broth, carrots, potatoes, thyme, and bay leaf.
  7. Bring to a boil, then reduce heat to low and simmer for 2 hours until beef is tender.
  8. Season with salt and pepper before serving.

Notes

  • This stew tastes even better the next day when the flavors have had time to meld.
  • Serve with crusty bread for a complete meal.
