Instructions

  1. Start by grating the zucchini and placing it in a clean kitchen towel. Squeeze out excess moisture.
  2. In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, eggs, garlic powder, onion powder, black pepper, salt, and parsley. Mix until well combined.
  3. Heat vegetable oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the heated skillet, flattening them slightly with a spatula.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.
