Wild Rice Soup with Mushrooms and Kale

A warm and hearty wild rice soup filled with mushrooms and kale to nourish your body and soul.

Ingredients

  • 1 cup wild rice
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups kale, chopped
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  2. Add mushrooms and cook until browned.
  3. Stir in wild rice, vegetable broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 45 minutes.
  5. Add kale and simmer for an additional 10 minutes.
  6. Adjust seasoning as necessary and serve hot.

Notes

  • This soup can be made ahead of time and frozen for later use.
  • For added creaminess, stir in some coconut milk at the end.
