White Chicken Lasagna Soup

A comforting and easy-to-make soup that combines the flavors of lasagna with tender chicken.

  • 8 cups chicken broth
  • 2 cups lasagna noodles
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until onions are translucent.
  2. Add chicken breasts and cook until browned on both sides.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in lasagna noodles and Italian seasoning. Cook according to noodle package instructions.
  5. Once noodles are cooked, stir in ricotta cheese, mozzarella cheese, and Parmesan cheese until melted and combined.
