White Chicken Chili Recipe

A hearty and warming white chicken chili that is perfect for any occasion.

  • 2 cups cooked, shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 4 cups chicken broth
  • 1 can (4 oz) green chilies, diced
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the shredded chicken, white beans, corn, green chilies, cumin, oregano, and chicken broth.
  3. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Cook for an additional 5 minutes until heated through.
  6. Serve warm, optionally garnished with cilantro.

Notes

  • For a spicier chili, add jalapeños or cayenne pepper.
  • This chili can be made ahead and refrigerated for up to 3 days.
