This creamy and comforting whip ricotta one pot chicken pasta is perfect for a quick weeknight dinner.

Ingredients

  • 1 pound chicken breast, diced
  • 8 ounces pasta of choice
  • 1 cup whipped ricotta cheese
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in garlic and Italian seasoning, cooking for another minute.
  4. Add pasta and chicken broth, bring to a boil.
  5. Reduce heat, cover and simmer until pasta is cooked through.
  6. Stir in whipped ricotta until creamy and combined.
  7. Season with salt and pepper, and garnish with parsley before serving.
