  • 1 teaspoon dried basil
  • 4 cups mixed vegetables (e.g., peas, green beans, corn)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Add garlic and cook for another minute.
  3. Pour in vegetable broth and add diced tomatoes, thyme, and basil.
  4. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  5. Stir in mixed vegetables and cook for an additional 10-15 minutes.
  6. Season with salt and pepper to taste before serving.
