  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, chopped
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic; sauté until softened.
  3. Stir in the carrots and celery; cook for about 5 minutes.
  4. Add the zucchini and bell pepper, continuing to sauté.
  5. Pour in the vegetable broth and diced tomatoes.
  6. Add basil, oregano, salt, and pepper.
  7. Bring to a boil, then simmer for 30 minutes.
  8. Adjust seasoning to taste and serve warm.
