  • 1/2 cup coconut oil
  • 1 cup brown sugar

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda

  • 1/4 cup almond milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tray with cupcake liners.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in melted coconut oil, brown sugar, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet mixture, alternating with almond milk, and stir until just combined.
  6. Fill each cupcake liner about 2/3 full with the batter.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool completely before frosting or serving.
