- 1/2 cup coconut oil
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup almond milk
- Preheat the oven to 350°F (175°C) and line a cupcake tray with cupcake liners.
- In a large bowl, mash the ripe bananas until smooth.
- Mix in melted coconut oil, brown sugar, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients into the wet mixture, alternating with almond milk, and stir until just combined.
- Fill each cupcake liner about 2/3 full with the batter.
- Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely before frosting or serving.
