Tuscan Vegan Gnocchi Soup

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups fresh spinach
  • 1 pound gnocchi
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Pour in the vegetable broth and diced tomatoes, and bring to a boil.
  4. Add the gnocchi, dried basil, and oregano. Reduce heat and let simmer for about 5 minutes or until gnocchi are cooked.
  5. Stir in the fresh spinach and cook until wilted. Season with salt and pepper.
  6. Serve hot, garnished with fresh herbs if desired.
