- 4 medium sweet potatoes
- 1 pound ground turkey
- 1 packet taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 cup salsa
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake for 45-60 minutes until tender.
- In a skillet, cook the ground turkey over medium heat until browned. Stir in taco seasoning, black beans, corn, and salsa. Cook until heated through.
- Once sweet potatoes are done, cut them open and fluff the insides with a fork.
- Fill each sweet potato with the turkey mixture, top with cheese, and return to the oven for 5 minutes to melt the cheese.
- Serve with sour cream and cilantro on top.
Notes
- For added flavor, you can use homemade taco seasoning.
