Tomato Zucchini Pasta

A delicious and simple one-pan recipe for Tomato Zucchini Pasta that combines fresh veggies and pasta for a satisfying meal.

Ingredients

  • 2 cups zucchini, sliced
  • 2 cups cherry tomatoes, halved
  • 8 ounces pasta of your choice
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Add zucchini and cherry tomatoes, cooking for about 5 minutes.
  4. Stir in the pasta, Italian seasoning, salt, and pepper.
  5. Add enough water to cover the pasta and bring to a boil.
  6. Reduce heat and simmer until pasta is cooked, about 10-12 minutes.
  7. Once done, stir in Parmesan cheese and serve warm.

Notes

  • Feel free to add other vegetables such as bell peppers or spinach.
