  • 1 pound cooked chicken, shredded
  • 1 cup red bell pepper, julienned
  • 1 cup carrots, shredded
  • 1 cup cucumber, sliced
  • 1/2 cup green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon sesame oil

Instructions

  1. Cook the rice noodles according to package instructions, then drain and rinse with cold water.
  2. In a large bowl, combine the cooked noodles, chicken, red bell pepper, carrots, cucumber, green onions, and cilantro.
