Sweet Potato Chowder

A warm and creamy sweet potato chowder that combines the goodness of sweet potatoes with the savory flavor of turkey bacon.

Ingredients

  • 2 large sweet potatoes
  • 4 strips turkey bacon
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Peel and cube the sweet potatoes, add to the pot, and stir for a few minutes.
  4. Add the vegetable broth and thyme, and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Blend the mixture until smooth, then return to pot.
  6. Stir in the heavy cream and season with salt and pepper. Heat through and serve garnished with turkey bacon.

Notes

  • For a vegan version, substitute turkey bacon and heavy cream with plant-based alternatives.
