Stuffed Patty Pan Squash with Sausage and Rice

A delicious and hearty dish featuring patty pan squash filled with a savory mixture of turkey bacon, beef, and rice.

  • 4 medium patty pan squash
  • 1 cup cooked rice
  • 6 strips turkey bacon, diced
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the patty pan squash and scoop out the insides.
  3. In a large skillet, cook the turkey bacon until crispy, then add the onion and garlic and sauté until translucent.
  4. Add the ground beef and cook until browned.
  5. Stir in the cooked rice, Italian seasoning, salt, and pepper.
  6. Fill each squash with the beef mixture and top with shredded cheese.
  7. Place in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly.

Notes

  • For a vegetarian option, substitute ground beef with black beans.
  • Feel free to add other vegetables to the filling, such as bell peppers or mushrooms.
