- 4 medium patty pan squash
- 1 cup cooked rice
- 6 strips turkey bacon, diced
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup shredded cheese
- Preheat the oven to 375°F (190°C).
- Cut the tops off the patty pan squash and scoop out the insides.
- In a large skillet, cook the turkey bacon until crispy, then add the onion and garlic and sauté until translucent.
- Add the ground beef and cook until browned.
- Stir in the cooked rice, Italian seasoning, salt, and pepper.
- Fill each squash with the beef mixture and top with shredded cheese.
- Place in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly.

- For a vegetarian option, substitute ground beef with black beans.
