- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup fresh strawberries, pureed
- ½ cup strawberry sauce
- Preheat the oven to 325°F (163°C).
- In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese until smooth. Add sugar and vanilla extract, mix until well combined.
- Add eggs one at a time, mixing well after each addition.
- Pour half of the cream cheese mixture over the crust. Swirl half of the pureed strawberries into the mixture.
- Pour the remaining cream cheese mixture over the first layer and swirl with the remaining strawberry puree.
- Bake for 55-60 minutes, until the center is set.
- Remove from oven and let cool to room temperature. Chill in the refrigerator for at least 4 hours before serving.
