Strawberry Swirl Cheesecake

  • 1 ½ cups graham cracker crumbs
  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup fresh strawberries, pureed
  • ½ cup strawberry sauce

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix together graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese until smooth. Add sugar and vanilla extract, mix until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour half of the cream cheese mixture over the crust. Swirl half of the pureed strawberries into the mixture.
  6. Pour the remaining cream cheese mixture over the first layer and swirl with the remaining strawberry puree.
  7. Bake for 55-60 minutes, until the center is set.
  8. Remove from oven and let cool to room temperature. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • Serve with additional strawberry sauce drizzled on top.
