Strawberry Muffins

Deliciously sweet strawberry muffins that are easy to prepare, perfect for breakfast or a snack.

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together melted butter, egg, and vanilla. Add to the dry ingredients and mix until just combined.
  4. Gently fold in the diced strawberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes until a toothpick inserted comes out clean.
  7. Allow to cool before serving.

Notes

  • For extra sweetness, you can sprinkle some sugar on top before baking.
