Strawberry Mango Split Cake – A Refreshing and Fruity Dessert

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh mango, diced
  • 1/4 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the strawberries and mangoes gently.
  8. Pour the batter into a greased baking pan and smooth the top.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before serving with whipped cream on top.

Notes

  • For extra flavor, you can add a splash of orange juice to the batter.
  • Silicone baking molds can be used for easy release.
