Stove Top, Crockpot, or Instant Pot Chicken Pot Pie Soup

This stove top chicken pot pie soup is a comforting and effortless meal, perfect for cozy evenings.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 2 cups potatoes, cubed
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup heavy cream
  • 1 cup flour (optional, for thickening)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned.
  2. Add carrots, celery, onion, and garlic; sauté until vegetables are tender.
  3. Pour in chicken broth, add potatoes and spices, and bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Stir in peas and heavy cream; simmer for an additional 5 minutes.
  6. If desired, whisk flour with a bit of water to create a slurry, then stir in to thicken the soup.

Notes

  • This soup can be made using a crockpot or instant pot as well.
  • Perfect served with crusty bread.
