- 1 pound chicken thighs
- 2 cups chicken broth
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh chives, chopped
- 2 tablespoons butter
- 1 cup carrots, sliced
- 1 cup celery, sliced
- In a large pot, melt the butter over medium heat. Add in the chicken and cook until browned.
- Add the carrots and celery, cooking until they soften.
- Pour in the chicken broth and bring to a simmer.
- In a bowl, mix flour, baking powder, and salt. Stir in herbs and add water until a dough forms.
- Drop spoonfuls of the dough into the simmering broth and cook for 10-12 minutes.
- Shred the chicken and add back to the pot. Stir gently and serve hot.
Notes
- Add more herbs to taste for a fresher flavor.
- For a richer broth, simmer longer with bones.
