Ingredients

  • 1 pound chicken thighs
  • 2 cups chicken broth
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tablespoons butter
  • 1 cup carrots, sliced
  • 1 cup celery, sliced

Instructions

  1. In a large pot, melt the butter over medium heat. Add in the chicken and cook until browned.
  2. Add the carrots and celery, cooking until they soften.
  3. Pour in the chicken broth and bring to a simmer.
  4. In a bowl, mix flour, baking powder, and salt. Stir in herbs and add water until a dough forms.
  5. Drop spoonfuls of the dough into the simmering broth and cook for 10-12 minutes.
  6. Shred the chicken and add back to the pot. Stir gently and serve hot.

Notes

  • Add more herbs to taste for a fresher flavor.
  • For a richer broth, simmer longer with bones.
