Springtime Chicken & Dumplings with Hella Fresh Herbs

A delightful spring dish featuring chicken and dumplings infused with fresh herbs.

Ingredients

  • 1 pound chicken thighs
  • 2 cups chicken broth
  • 1 cup all-purpose flour
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon baking powder

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Stir in garlic and cook for another minute.
  3. Add chicken thighs and cook until browned.
  4. Pour in chicken broth and bring to a simmer.
  5. In a separate bowl, mix flour, baking powder, dill, parsley, salt, and pepper.
  6. Add water gradually to form a dough.
  7. Drop spoonfuls of dough into the simmering broth.
  8. Cover and cook for 15 minutes until dumplings are fluffy.

Notes

  • For added flavor, include other fresh herbs like thyme or chives.
  • Serve with a side of crusty bread.
