Spinach Lasagna Roll Ups

Enjoy a delicious twist on traditional lasagna with these cheesy spinach roll ups, perfect for a family dinner.

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1 jar marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente.
  3. In a bowl, mix ricotta cheese, 1 cup mozzarella, Parmesan, garlic powder, Italian seasoning, and chopped spinach.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Spread the cheese mixture over each noodle, then roll them up and place them seam-side down in the baking dish.
  6. Top with remaining marinara sauce and mozzarella cheese.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly.

Notes

  • For a meatier version, you can add cooked ground beef or sausage to the cheese mixture.
  • These roll ups can be assembled in advance and stored in the refrigerator before baking.
