  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon soy sauce
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli)
  • 1 tablespoon sesame oil
  • 2 green onions, chopped

Instructions

  1. In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender, about 15 minutes.
  2. While the rice cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
  4. Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  5. Stir in the soy sauce and mixed vegetables; cook until vegetables are tender, about 5 minutes.
  6. Drizzle sesame oil over the dish, mix well, and remove from heat.
  7. Serve shrimp mixture over rice, garnished with chopped green onions.
