1 pound shrimp, peeled and deveined
1 cup jasmine rice
2 cups water
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon red pepper flakes
1 tablespoon soy sauce
2 cups mixed vegetables (e.g., bell peppers, broccoli)
1 tablespoon sesame oil
2 green onions, chopped
Instructions
In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender, about 15 minutes.
While the rice cooks, heat olive oil in a large skillet over medium heat.
Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
Stir in the soy sauce and mixed vegetables; cook until vegetables are tender, about 5 minutes.
Drizzle sesame oil over the dish, mix well, and remove from heat.
Serve shrimp mixture over rice, garnished with chopped green onions.
