- 1 1/2 cups sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 pound cooked salmon, flaked
- 1/4 cup mayonnaise
- 1 tablespoon Sriracha sauce
- 1 teaspoon sesame oil
- 1/4 cup green onions, chopped
- 2 sheets nori, cut into strips
- Preheat the oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine rice and water; bring to a boil.
- Reduce heat to low and cover, cooking for 20 minutes.
- In a bowl, combine rice vinegar, sugar, and stir until dissolved. Add to cooked rice.
- In a separate bowl, mix the salmon, mayonnaise, Sriracha, sesame oil, and green onions.
- Spread the seasoned rice evenly in a baking dish.
- Top with the salmon mixture, spreading evenly.
- Sprinkle nori strips on top and bake for 15-20 minutes.
- Let cool slightly before serving.
Notes
- Feel free to adjust the spiciness by adding more or less Sriracha.
- Serve with pickled ginger and soy sauce for dipping.
