Spicy Maple Chicken & Coconut Rice

A delightful blend of spicy maple chicken served with creamy coconut rice.

  • 4 pieces chicken thighs
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 2 cups coconut milk
  • 1 cup jasmine rice
  • 1/2 teaspoon salt
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup, soy sauce, garlic powder, and cayenne pepper.
  3. Coat the chicken thighs with the marinade and let it sit for 30 minutes.
  4. Heat olive oil in a pan and sear the chicken for 5 minutes on each side.
  5. Transfer the chicken to a baking dish and pour the remaining marinade over it.
  6. Bake in the oven for 25-30 minutes or until cooked through.
  7. In a separate pot, combine coconut milk, rice, and salt. Bring to a boil.
  8. Reduce heat, cover, and simmer for 15-20 minutes or until rice is tender.
  9. Stir in lime juice before serving.

Notes

  • Serve with fresh cilantro on top for added flavor.
  • Adjust the spice level according to preference.
