  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1 avocado, diced

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked.
  2. Drain excess fat and stir in taco seasoning according to package instructions.
  3. In a large bowl, combine the chopped romaine, cherry tomatoes, corn, and black beans.
  4. Add the seasoned beef to the salad mixture and toss to combine.
  5. Top with shredded cheese, salsa, sour cream, and diced avocado before serving.
