Southern Potato Salad

Deliciously creamy and packed with flavor, this Southern Potato Salad combines the smokiness of turkey bacon and the richness of chicken ham for a delightful twist on a classic dish.

Ingredients

  • 2 pounds potatoes
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1/2 cup diced turkey bacon
  • 1 cup diced chicken ham
  • 1/4 cup chopped green onions
  • 2 boiled eggs, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Boil the potatoes in salted water until fork-tender. Drain and let cool before peeling and dicing.
  2. In a large bowl, mix together the mayonnaise, mustard, salt, and pepper.
  3. Add in the cooled potatoes, turkey bacon, chicken ham, green onions, and boiled eggs. Stir gently to combine.
  4. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld.

Notes

  • For a tangier flavor, add a little more mustard or a splash of vinegar.
