  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels, frozen or fresh
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups cooked rice or quinoa, for serving
  • 1 cup shredded cheese, for topping
  • 1/2 cup chopped fresh cilantro, for garnish

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the black beans, corn, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. Stir to combine all the ingredients.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir back into the mixture.
  6. Serve over rice or quinoa and top with cheese and cilantro.
