Slow Cooker Beef and Broccoli

Ingredients

  • 1 pound flank steak, sliced thinly against the grain
  • 2 cups broccoli florets
  • 1/4 cup soy sauce
  • 1/4 cup beef broth
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated

Instructions

  1. Place the sliced flank steak in the slow cooker.
  2. In a small bowl, whisk together soy sauce, beef broth, brown sugar, garlic, ginger, and sesame oil. Pour over the beef.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add broccoli florets to the slow cooker.
  5. In another bowl, mix cornstarch and water to create a slurry and add to the slow cooker to thicken the sauce.
  6. Serve hot over rice or noodles.

Notes

  • For more flavor, marinate the beef in the sauce overnight.
  • Serve with steamed rice for a complete meal.
