Slow Cooked Summer Beef Casserole

A delightful slow cooked beef casserole perfect for family meals during the summer.

Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 2 potatoes, diced
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the beef cubes on all sides.
  2. Transfer the browned beef to a slow cooker.
  3. Add the onion, garlic, carrots, potatoes, diced tomatoes, beef broth, Worcestershire sauce, thyme, salt, and pepper to the slow cooker.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 8 hours or until beef is tender.
  6. Serve hot with your choice of sides.
