Shepherd’s Pie Soup is a comforting and hearty dish that combines all the classic flavors of shepherd’s pie in a warm, soothing soup form.

  • 1 pound ground lamb or beef
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 2 cups beef broth
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic and sauté until soft.
  2. Add the ground lamb or beef and cook until browned.
  3. Stir in the carrots, potatoes, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  4. Pour in the beef broth and bring the mixture to a boil.
  5. Reduce the heat and let it simmer for about 20 minutes until the vegetables are tender.
  6. Stir in the frozen peas and cook for an additional 5 minutes.
  7. Serve hot and enjoy!
