A warm and hearty Shepherd’s Pie Soup that combines all the classic flavors of the traditional dish in a comforting soup form.

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 2 cups frozen mixed vegetables
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce
  • 2 cups mashed potatoes
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the chopped onion and garlic, cooking until softened.
  3. Pour in the beef broth and add the frozen mixed vegetables.
  4. Stir in the tomato paste, thyme, and Worcestershire sauce. Season with salt and pepper.
  5. Bring to a simmer and cook for 15 minutes.
  6. Serve hot, topped with a scoop of mashed potatoes.
