Savory Italian Zuppa Toscana Soup

  • 4 slices turkey bacon
  • 1 cup chicken ham, chopped
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup potatoes, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the chicken ham, potatoes, and chicken broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Add kale, Italian seasoning, red pepper flakes, salt, and pepper. Cook for an additional 5 minutes.
  6. Crumble the cooked turkey bacon on top before serving.
