Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed graham crackers and melted butter and press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Fold in diced apples, caramel sauce, cinnamon, and nutmeg.
  6. Pour the cheesecake filling over the crust.
  7. Bake for 50-60 minutes or until set. Let cool completely.
