  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchini into half-moons about 1/4 inch thick.
  3. In a bowl, mix the zucchini with olive oil, garlic powder, salt, and pepper.
  4. Spread the zucchini on a baking sheet in a single layer.
  5. Roast for 15-20 minutes, until tender and slightly golden.
