Roasted Vegetable Pasta

  • 8 ounces pasta of your choice
  • 2 cups mixed seasonal vegetables, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the chopped vegetables with olive oil, salt, pepper, and Italian seasoning.
  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender.
  4. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  5. Combine the roasted vegetables with the cooked pasta and toss well.
  6. Serve with grated Parmesan cheese on top.
