Roasted Sweet Potato Tacos

Enjoy these delicious roasted sweet potato tacos, a perfect alternative to takeout.

Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 8 corn tortillas
  • 1 cup black beans, rinsed and drained
  • 1 avocado, sliced
  • 1/2 cup pico de gallo
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes. Toss them with olive oil, paprika, cumin, garlic powder, and salt.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
  4. While the sweet potatoes are roasting, heat the corn tortillas in a skillet.
  5. Once the sweet potatoes are done, assemble the tacos with sweet potatoes, black beans, avocado, pico de gallo, and cilantro.
  6. Serve warm and enjoy!

Notes

  • These tacos can be topped with your favorite salsa for extra flavor.
  • For a spicier kick, add jalapeños.
