- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 8 corn tortillas
- 1 cup black beans, rinsed and drained
- 1 avocado, sliced
- 1/2 cup pico de gallo
- 1/4 cup cilantro, chopped
- Preheat the oven to 425°F (220°C).
- Peel and cube the sweet potatoes. Toss them with olive oil, paprika, cumin, garlic powder, and salt.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
- While the sweet potatoes are roasting, heat the corn tortillas in a skillet.
- Once the sweet potatoes are done, assemble the tacos with sweet potatoes, black beans, avocado, pico de gallo, and cilantro.
- Serve warm and enjoy!
